Technically this doesn’t have to be just for Thanksgiving, but a lot of times people on low carb or keto diets worry about what they’ll eat for the holidays that isn’t packed with carbs and still tastes delicious.

This my friend fits the bill!! Even though technically green beans are considered a legume, they are not as high in carb as beans that are not in a pod and they also do not have much phytic acid like brown or black beans, which is the problem with those type of beans. As well, if you were to eat brown or black beans you would fill up your plate or bowl with them. With green beans however they are usually used as a side dish, or as in this main dish, they are only a portion of the casserole.

Low Carb Thanksgiving Green Bean Casserole Recipe


Easy and Even Mushroom or Egg SlicerEasy and Even Mushroom or Egg Slicer

  • 2 cups fresh green beans sliced
  • 2 cups cubed ham steak
  • 2 green onions chopped
  • 1/4 cup sliced fresh portabella mushrooms
  • 8 ounces of your favorite cheese (I used colby jack)
  • 1/4 cup mayonnaise
  • 2 tblsp butter
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp garlic powder


  • Place fresh green beans into a pan with butter and enough water to cover the beans to boil. Cook for about 5 minutes until they reach an even slight tenderness (they will cook more in oven so do not over cook). Drain beans.
  • In a large glass casserole dish, I used an 8″x 11″, place all ingredients and mix well.
  • Bake uncovered at 350 degrees for 30 minutes, or until brown and bubbly.
