Low Carb Cheesy Cauliflower Casserole. Try this favorite Keto Diet Dish and fall in Love.

Helloooooooo!  Oh man this Low Carb Cheesy Cauliflower Casserole is a good one!  I have been standing clear of in depth cauliflower recipes due to them having a slightly higher carb count than I wish they would. But OMG… this is delicious!! And per serving the carb count wasn’t that bad at all.

low carb cheesy cauliflower bakeFirstly let me recommend using a steamer instead of boiling the cauliflower.  That way you don’t lose precious tidbits of it as you strain out the water.  As well, that method still leaves the cauliflower a bit watery and we don’t want that, we want cheesy and creamy.

This is the steamer my mother gave me and it works wonderful!  It comes with two 2 different sized steamer bowls and another insert bowl to steam all kinds of things. My favorite is eggs, of course that is due to the keto diet. One of the bowls actually has little spots for the eggs!

If you want this exact steamer, it is called an Oster Food Steamer and you can find it here on Amazon. I do not know if it is sold in stores, mine is a hand me down.

As you can tell below, I left the pieces of cauliflower pretty large so I didn’t want to mess with small bits until I was ready to mash it. This is an entire head of cauliflower by the way. On the top right, mid way down, notice the two pieces of garlic so yum!  Steaming them is easier than roasting – Hey, I am LAZY remember?

I steamed these for about 30 minutes to get them soft enough to mash.  Use a fork to test tenderness, you can always steam longer. I used a small food processor to mash it, but you can use a hand masher and/or a hand mixer just like you would with potatoes. The garlic mashes up a long with it.

So let’s get to the actual recipe!

Low Carb Cheesy Cauliflower Casserole

On further note, I used a Glass Dish for Baking this is the one I used:  1.5 Quart Pyrex Glass Dish as shown here.

Diet Information:

  • 6 Servings (this makes a lot)
  • Estimated Carbs per serving is less than 8.  

***Please note if you use any different products you may result in a different carb count.  It’s best to know the carbs in the exact products you are using.

Ingredients:

  • Mashed head of Cauliflower (with the 2 cloves of Garlic)
  • 4 strips of Cooked Bacon
  • 1 cup of Shredded Colby Jack Cheese (or cheese of your choice)
  • 1/2 cup of Daisy Sour Cream (add more to taste if desired keep in mind carb count)
  • 2 Tblspn chopped Green Onion Stem
  • 1 Tblspn Cilantro
  • Salt and Pepper to Taste
  • 1-2 tsp of Parsley
  • Aluminum Foil

Instructions:

  • Preheat oven to 375F.
  • Shred bacon into bits with hand or knife.
  • Mix all ingredients together then add in the cauliflower mash mixture.
  • Stir and mix together well.
  • Top with a final sprinkling of parsley.
  • Cover with aluminum foil.
  • Cook for 25 to 30 minutes.
  • After it is done, sprinkle on a small amount of cheese for looks.
